The verdict
The sherry fermentation is distinctive but a bit too much. It adds a bitterness at the end, and the smell and nose are so heavy on the sherry that the underlying bean disappears. Interesting as a one-off, not something I could drink daily. Acidity is pretty decent. Brewed on a V60 using the Sherrycipe, and tasted both iced and hot.
